Hygiene of foodstuffs Regulation
In short
The Food Hygiene Regulation places direct, penalisable duties on every food business operator, regardless of size. Each establishment must be registered with the competent authority, run permanent procedures based on HACCP principles, and meet general hygiene requirements, including on potable water supply. Since 2021 these also cover food allergen management, the redistribution of food and a food safety culture.
A proposal to simplify how Member States adapt the hygiene requirements nationally is still at committee stage in Parliament and has not been adopted.
